Est! Est!! Est!!! di Montefiascone DOC (Campolongo cuvée) from Cantina Stefanoni, on the volcanic slopes of Lake Bolsena. A blend of Trebbiano Toscano, Malvasia and Roscetto vinified in stainless steel: straw-yellow robe with golden highlights, refined nose of yellow fruit and orange blossom, dry, savoury and mineral palate.

Cantina Stefanoni, a family estate in Montefiascone passed down since 1950, works with the local Roscetto (a clone of Trebbiano Giallo) in collaboration with the University of Perugia. The name "Est! Est!! Est!!!" comes from the legend of Bishop Johannes Defuk, whose servant would mark "Est!" on the best inns — and tripled the mark at Montefiascone.
