Pecorino 'Prope' from the Velenosi estate, a modern range produced on the Abruzzo side (Controguerra). 100% Pecorino, cryomaceration followed by fermentation in concrete vats and ageing on fine lees: bright straw-yellow appearance, an expansive nose of pear, bread crust and herbs, a savoury, saline and lively palate.
